I love making and eating banana bread, I mean, even pre-pandemic I loved everything banana bread (that is saying a lot, am I right?) I typically add chocolate chips, or cocoa nibs, sometimes walnuts, cranberries, or even pour a sweet glaze on top. However, this uber chocolaty, protein packed version cannot be beat!
*Pro tip: Add almond butter on each slice for even more protein, or simply for a good time 😉
Ingredients
- 1 cup coconut sugar
- 1/2 cup oil (I’ve used coconut oil, ghee and unsalted butter – all work great!)
- 2 eggs
- 4 ripe bananas (I freeze mine and microwave them in their skins for 3 minutes)
- 1/2 tsp vanilla
- 1 cup whole wheat flour

- 1 tsp baking powder
- 1/2 cup chocolate chips
Method
- Pre-heat oven to 350 degrees
- Cream oil and sugar
- Crush bananas and then add the eggs and vanilla, mix well
- Sift flour and baking powder
- Add dry ingredient to the wet, mix well
- Fold in chocolate chips
- Pour into a parchment lined loaf pan, garnish with more chocolate chips if desired
- Bake at 350 degrees for 60 minutes
